Some pool thermometers have a cap on one end to make it float, but that cap can usually be pulled off so that it sinks.
Bit of monofiliment line, or a leader, and a bell sinker attached to the end.

A good idea except aren't those sinkers metal?
The plastic el-cheapo one I had used to float unless you held it underwater until it filled with water; whatever genius that designed it only left a small hole at the TOP to let water in. I just drilled a hole in the bottom of the case and it fills and sinks quite nicely now.
