If by fading you mean the pavers are getting a white-ish look then you are talking about efforescence. This is a natural process in pavers where the salt in the cement leaches to the surface. After a while the process will stop. To correct it you need to acid wash the pavers.
As fas as sealing the pavers; I have used a roll on with great success. The product I used is called Techniseal. There are probably dozens of similar products. I chose a sealer that drys with a wet look. You could spray it on but cleanup would be a mess (and you would need to tape off areas you don't want covered). The roll on method allows better control and you only need a paint roller with extension handle and a paint tray.
