Ok...I've been MIA for a bit now...pool looks GREAT! But...my PH is down to 7.0. How much borax will I need to raise that up to 7.6-7.8 ? I've put one box in tonight already...but I have 3 more on stand by. Should I just put one box in per night till I get the levels up were they need to be?

Oh...and should I start adding my stabilizer now? How much is normal for stabilizer? I'm printing this page after all this so that I know what to do next year after opening

Yes, that's by FAR the best way to adjust pH! If your pH is in the danger zone (>8.2 or <6.8) you can use the acid / base demand test in the K2006 to measure (not: calculate) a near exact dose. But, if you are in the safe zone (and you are) adjusting a little at a time is by far the best way to adjust pH.
