Default Stone coping advice on a new fiberglass pool.

We are installing a new Leisure fiberglass pool. We have chosen concrete as the material for our pool deck, but will install a man made concrete stone for the coping. Any advice on what to ask my stone guy would be appreciated. Can this type of stone be glued in place onto a concrete "shelf", or should it be set with mortar? We chose a stone that has a fullnose edge and is 12" wide x 24" long.
